 Chia & Pepita Seed Banana Bread

You will need:

180ml Milk

70g Melted Butter

2 Eggs (50g Each)

3 Bananas (2 mashed and 1 for decoration)

1/4 cup Chai Seeds (plus extra for decoration)

1 Packet (450g) The Natural Baking Co Banana Bread Mix

1/4 cup Pepita Seeds (plus extra for decoration)

Preheat oven to 160°C fan-forced or 180°C conventional. Lightly grease and line loaf pan with baking paper.


Empty contents of banana bread mix sachet into a large mixing bowl. Add eggs, milk, butter and mashed bananas. Blend with a wooden spoon until combined into a smooth batter. Add 1/4 cup chia seeds and 1/3 cup pepita seeds, blend until combined. Pour the batter into the prepared loaf pan.


Take one additional banana and cut it length ways into slices. Take two or more of the slices, chia seeds, pepita seeds and place them on top of the banana bread mixture to decorate to your taste. 


Bake for 50-55 minutes. Banana bread is baked if it springs back when lightly touched in the centre or when an inserted skewer comes out clean. Allow banana bread to cool in pan for 5 minutes, before transferring onto a wire rack to cool completely.
